Unless the pool is heated, bring your wet suits. Orlando's got decent weather in January -- definitely warmer than Copenhagen -- but it's no Palm Beach!

Just returned from Disney with my family. We always stay on property since it is so convenient in terms of free transportation. We stayed at Pop Century, which is one of the economy-priced resorts. It's better than the other All-Star resorts since it has its own dedicated bus service to the parks. BTW, I didn't dip in the hotel's pools (they have three), but I was told they are heated. Saw a bunch of people on 50-degree nights taking a swim.
Be sure to get to Hollywood Studios early in the day to get a FastPass for the new Toy Story ride. Lots of fun for the kids (and me too). Enjoy your trip.
Look at the websites for Allstar Vacation homes or Aplus vacation homes. Nice homes, any size, usually with pool and jacuzzi close to Disney.
Golf courses: Agree with the Falcon's Fire recommendation. Also: Orange County National (two great courses), Celebration, Metro West, are all great tracks.
